Patricia Borsato
Culinary Nutrition & Mental Health
I have dedicated the last 17 years to exploring the intersection of food, chemistry, mental health, and longevity. My work explored how food impacts mood and mental health overall, and I went on to coach numerous clients through their own rebuilding journeys, using practical culinary strategies to support stability, confidence, and long-term vitality.
My background in chemistry and formal culinary training shaped how I applied my skills and knowledge to inspire better health and wellbeing. The deeper reason my work focused on nutrition and mental health began with my own journey of healing and recovery. During a challenging period in my life, I experienced firsthand how profoundly food could influence my mental health and resilience.
Teaching Focus
My cooking sessions broaden the culinary lens, connecting ingredient selection, heritage cooking, and food science to mental well-being and long-term vitality.
Themes may include and are not limited to:
- Mediterranean-inspired whole-food techniques and flavour building
- The connection between food, mood, and overall mental well-being
- Cooking for sustained energy and long-term vitality
- Ingredient intelligence: understanding how food choices influence how we feel
- Practical culinary strategies to prevent burnout
- Seasonal simplicity and nutrient-dense cooking
- Integrating well-being into professional and home kitchen practices
Sessions can be delivered as guest lectures, demonstration-based classes, experiential workshops and teambuilding.
"Long before I began teaching about resilience, I experienced firsthand how deeply food can steady the mind and support healing."

Mood Boosting Foods Adult Class - Demo
The relationship between nutrition and mental well-being has been widely studied over the past two decades. Emerging research continues to show that what we eat can influence important aspects of brain health, including energy levels, mood stability, focus, and overall resilience. In this engaging demonstration class, Chef Patricia Borsato revisits the concept that first inspired her earlier work with Mood Food: exploring how everyday ingredients can support both physical and mental well-being. Drawing from Mediterranean cooking traditions and her background in nutrition and chemistry, Patricia prepares a selection of dishes that highlight foods rich in healthy fats, minerals, and plant compounds known to support brain health. Guests enjoy tastings while learning how thoughtful ingredient choices and simple cooking techniques can help create meals that nourish both body and mind. The menu includes: roasted zucchini with Brazil nut pesto; creamy risotto with mackerel, apple, fennel, and lemon; and dark chocolate avocado mousse with toasted pumpkin seeds and raspberries.
